- 1 ripe banana
- 2 eggs
- 60 ml (1/4 cup) milk (you can choose dairy milk or a plant-based milk of your choice)
- 60 grams (1/2 cup) whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract (optional)
- A pinch of salt
- Oil or butter for frying

- Mash the banana in a bowl with a fork until it becomes a smooth puree.
- Add the eggs, milk and vanilla extract to the bowl with the mashed banana and whisk everything together well.
- Add the whole wheat flour, baking powder and a pinch of salt to the mixture and stir until smooth. Make sure there are no lumps left.
- Heat a frying pan over medium heat and add a little oil or butter to grease the pan.
- Pour about 60 ml (1/4 cup) of the batter into the pan for each pancake. You can make smaller or larger pancakes depending on your preference.
- Cook the pancake on one side until bubbles appear on the surface and the edges are firm. Carefully flip the pancake with a spatula and cook the other side for another minute or two.
- Repeat this process until all the batter is used up.
