Ingredients for making your own healthy pancakes

  • 1 ripe banana
  • 2 eggs
  • 60 ml (1/4 cup) milk (you can choose dairy milk or a plant-based milk of your choice)
  • 60 grams (1/2 cup) whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract (optional)
  • A pinch of salt
  • Oil or butter for frying

Instructions for making your own healthy pancakes

  1. Mash the banana in a bowl with a fork until it becomes a smooth puree.
  2. Add the eggs, milk and vanilla extract to the bowl with the mashed banana and whisk everything together well.
  3. Add the whole wheat flour, baking powder and a pinch of salt to the mixture and stir until smooth. Make sure there are no lumps left.
  4. Heat a frying pan over medium heat and add a little oil or butter to grease the pan.
  5. Pour about 60 ml (1/4 cup) of the batter into the pan for each pancake. You can make smaller or larger pancakes depending on your preference.
  6. Cook the pancake on one side until bubbles appear on the surface and the edges are firm. Carefully flip the pancake with a spatula and cook the other side for another minute or two.
  7. Repeat this process until all the batter is used up.
  8. Serve the healthy pancakes with fresh fruit, a little honey or maple syrup, and enjoy!
